- Assists servers with transporting dishes and/or service trays to and from the kitchen and dining room.
- Complete all assigned opening and closing sides work to prepare the dining room, kitchen and gas stations for efficient operation during meal period.
- Cleans and maintains all areas of the restaurant includingkitchen, bar, lobby, break rooms and grounds; cleans tables and chairs with sanitation spray and towel.
- Collaborate with waiters to ensure tables are cleaned, sanitized, and ready for the next meeting.
- Organizes and prepares tables for scheduled meetings.
- Serve chips, salsa and ice water to customers.
- It keeps the bar full of supplies with food such as chips, salsa and drinks.
- Keep the ice cube (container) full throughout the day.
- Assist the server, bartender and customers as needed throughout the meal period.
- Keep an eye on the tables and alert the servers in case guests need spare parts for drinks or any other need.
- It lifts and carries the garbage from the restaurant and is disposed of in the appropriate areas.
- Adheres to all the rules and procedures of the restaurant paying special attention to health and / or safety procedures.
- Cleans and polishes service bar doors and equipment such as coffee urns, iced tea dispensers, and soda machine.
- Report any problems or discrepancies to management immediately.
- Communicate with the host/hostess and the manager when the tables have been cleared.
- Apply knowledge of the full menu and other restaurant information.
- Knowledge of hours, numbers of tables, sections and type of payments.

Born into a family with 15 children, Jose Ramirez was "lucky number 7." He started his pursuit of this dream as a 13-year-old bagboy at a grocery store in what is known as The Highlands area of Denver. He later worked as a server at Las Palmas, working 60-70 hours per week, eventually becoming the server manager. He would work so much that he would oftentimes sleep in his car while providing for his wife, Martha, and his two sons, Luis and Daniel. Jose saved up enough money to open up the first Los Dos Potrillos location in Centennial in 2002. Jose opened this first location of Los Dos with just $5.18 left in his bank account. Having sunk everything he had into his restaurant, Jose would tell these first customers of Los Dos that if they didn't like the food, he'd buy it for them. Now with four locations in Centennial (the original location), Littleton, Highlands Ranch, and Parker, Los Dos Potrillos provide customers in the South Metro area with "Real Mexican Food" while maintaining a family-friendly, "hole-in-the-wall" experience thanks to years of hard work by Jose Ramirez and his family.
