- Serve as the on-site operational lead for all catered events and meetings.
- Take full ownership and accountability of events execution, breakdown, and post-event follow-up.
- Review and confirm event details with the Catering & Events Administrator, including timelines, staffing, service style, menus, and special requirements.
- Oversee event setup, service flow, and teardown to ensure events are executed accurately, on schedule, and to standard.
- Proactively coordinate with location leadership when:
- Food is being produced or supplied from certain locations, and/or
- Events are taking place at one of the Los dos Potrillos locations.

- Serve as the primary point of contact between catering operations, location leadership, and event staff to ensure alignment and accountability.
- Lead, direct, and support banquet staff during events, providing hands-on oversight and guidance.
- Adjust staffing levels, service flow, and event timing in real time to meet operational and guest needs.
- Enforce all departmental and company standards, policies, and procedures.
- Assist in developing, maintaining, and documenting banquet standards, service procedures, and workflows.
- Maintain clean, organized, and professional event spaces, storage areas, and equipment always.
- Maintain clear, professional communication with banquet staff, the Catering & Events Administrator, location leadership, and other departments.
- Maintain strict confidentiality of guest, client, and employee information.
- Maintain accurate, up-to-date Event Orders (BEOs) and event documentation.
- Prepare and complete consumption forms and post-event paperwork to ensure accurate billing.
- Ensure all buffet, bar, and product signage is prepared and displayed appropriately for each event.
- Assist with preparation and distribution of event packets, daily schedules, and staff notifications.
- Obtain ServeSafe Manager Certificate
- Bilingual Preferred
- Previous banquet or event supervisory experience preferred
- Strong hands-on leadership, organization, and problem-solving skills
- Proficiency in Microsoft Office and event-related administrative tasks
- Ability to thrive in a fast-paced, multi-location event environment

Born into a family with 15 children, Jose Ramirez was "lucky number 7." He started his pursuit of this dream as a 13-year-old bagboy at a grocery store in what is known as The Highlands area of Denver. He later worked as a server at Las Palmas, working 60-70 hours per week, eventually becoming the server manager. He would work so much that he would oftentimes sleep in his car while providing for his wife, Martha, and his two sons, Luis and Daniel. Jose saved up enough money to open up the first Los Dos Potrillos location in Centennial in 2002. Jose opened this first location of Los Dos with just $5.18 left in his bank account. Having sunk everything he had into his restaurant, Jose would tell these first customers of Los Dos that if they didn't like the food, he'd buy it for them. Now with six locations in Centennial (the original location), Littleton, Highlands Ranch, Parker, Northglenn, and Castle Rock, Los Dos Potrillos provide customers in the South Metro area with "Real Mexican Food" while maintaining a family-friendly, "hole-in-the-wall" experience thanks to years of hard work by Jose Ramirez and his family.
